1 egg white to 50 grams of sugar; the less sugar you add to the mixture the more chewy the meringues will turn out like. Whisk just egg whites till they form peaks, add sugar, whisk. Form into balls on grease proof paper on baking tray. Bake at low heat for two hours. Leave in the oven to cool overnight.
